
Our house sourdough. Not really brown, not exactly white. Made from a blend of directly traded wheat grains grown without chemicals in the UK and entirely stoneground.
We work with farmers seeking to advance regenerative farming methods as well as traditional stone millers; some of whom mill by waterpower alone. Our flour blend changes regularly but always includes a good percentage of wholemeal, heritage and population wheats for maximum flavour, nutrition and digestibility. 100% wholemeal levain. GLUTEN.
